Keto Cheesy Taco Skillet

 Keto Cheesy Taco Skillet makes for a Quick and Easy Low-Carb Keto Weeknight Dinner.

INGREDIENTS
  • 1 1/2 pounds grass fed ground beef
  • 1 zucchini (chopped)
  • 1 onion (chopped)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 2 large tomatoes (chopped)
  • 4 garlic cloves (finely chopped)
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons cumin powder
  • 2 teaspoons onion powder
  • 1 teaspoon paprika
  • 2 teaspoons oregano
  • 1/4 teaspoon black pepper
  • 1 1/2 tablespoons tomato paste
  • 2 cups white shredded cheddar cheese
  • salt to taste
INSTRUCTIONS
  • Heat the oil in a skillet over medium high heat. Add onions, bell peppers, and zucchini and sauté about 5 minutes.
  • Add the ground beef, garlic, and salt and mix well cooking until the meat is done.
  • Add the taco seasoning ingredients and the tomatoes mixing well and cook for a couple of minutes to incorporate flavors.
  • Mix in the tomato paste and cook for about 10 minutes.
  • Spread the white cheddar cheese over the top of the beef and cover.
  • Cook until the cheese is melted.
  • Divide into 8 servings roughly around 1/2 cup.
