Keto Taco Stuffed Bell Peppers
These keto taco stuffed peppers are loaded with seasoned ground beef, melted cheese, avocado, and sour cream for an easy low-carb dinner.
Ingredients
- 4 bell peppers, halved and seeded
- 1 lb. ground beef
- 2 tablespoons of Keto taco seasoning
- ½ cup salsa (with no added sugar)
- 1 cup shredded cheddar or Mexican blend cheese
- Sour cream, avocado, cilantro, or green onion for topping
Instructions
- Brown the ground beef
- Stir in taco seasoning and salsa.
- Fill pepper halves with taco meat.
- Top with shredded cheese.
- Bake at 375°F for 20–25 minutes, until peppers are tender and cheese is melted.
- Add toppings before serving.
- Note: For softer peppers, bake them empty for 10 minutes before filling.
