Keto Taco Stuffed Bell Peppers

These keto taco stuffed peppers are loaded with seasoned ground beef, melted cheese, avocado, and sour cream for an easy low-carb dinner.

Ingredients

  • 4 bell peppers, halved and seeded
  • 1 lb. ground beef 
  • 2 tablespoons of Keto taco seasoning
  • ½ cup salsa (with no added sugar)
  • 1 cup shredded cheddar or Mexican blend cheese
  • Sour cream, avocado, cilantro, or green onion for topping 

Instructions

  • Brown the ground beef
  • Stir in taco seasoning and salsa.
  • Fill pepper halves with taco meat.
  • Top with shredded cheese.
  • Bake at 375°F for 20–25 minutes, until peppers are tender and cheese is melted.
  • Add toppings before serving.
  • Note: For softer peppers, bake them empty for 10 minutes before filling.
