Keto Tomato Basil Chicken

Keto Tomato Basil Chicken is your answer to a weeknight Keto Dinner. You're sure to fall in love with this low-carb recipe. Imagine mouthwatering chicken,  the tantalizing flavor of garlic and basil; all smothered in a rich tomato sauce! Yum, Yum, Keto Yum.

INGREDIENTS
  • 1 pound boneless chicken breasts or thighs
  • 3 cloves garlic
  • 2 tablespoons basil
  • 1 tablespoon olive oil
  • 1 tablespoon coconut oil
  • 1/2 diced onion
  • 1 1/2 tablespoons nutritional yeast
  • 1/2 cup full fat coconut milk
  • 1/2 teaspoon arrowroot powder
  • 1/2 cup water
  • 1 cup cherry tomatoes
  • salt and pepper to taste
  • Kamala olives (optional)
INSTRUCTIONS
  • Sauté onions in the coconut oil over medium heat until they are translucent.
  • Add the chicken next and cook together for about 10 to 15 minutes flipping once until chicken is done.
  • Next place the garlic in a food processor and pulse until it is finely minced.
  • Add the basil, nutritional yeast, salt and pepper, and the olive oil and pulse until the basil becomes minced.
  • In a bowl mix the arrowroot powder with the water and then add the coconut milk and the pesto from the food processor.
  • Pour the sauce mixture into the pan with the chicken and add the tomatoes.
  • Allow to simmer for 5 to 10 minutes and then serve.
